After growing up in the restaurant industry and attending Le Cordon Bleu in Paris, FR, Caroline’s career has gone on to include starting 21 businesses, 16 restaurants and working in food and beverage for catering, hotels, night clubs, bars, festivals, every type of restaurant, even launching a food tech start-up.

She has worked with many Michelin starred chefs, TV celebrity chefs, James Beard Award winners, and internationally at some of the finest hotels and restaurants in America and Europe. Chefs and Restaurateurs she has worked with include Dominique Crenn, David Chang, Sean Brock, Danny Meyer, Alex Guarnaschelli, Duff Goldman, Bobby Flay, Rick Bayless, Joe Bastianich, Tom Colicchio, Ziggy Marley, Mario Batali, April Bloomfield, Matty Matheson, the list goes on….

Leading the industry, Caroline’s designs have become iconic including railway wine bars, modern speakeasies, experiential and quick-serve dining, sophisticated dining experiences and trendy gastropubs.

Caroline built New York City’s first large scale wine bar, OTTO enoteca pizzeria, America’s first Gastropub, The Spotted Pig, and was a Founding Member, Food Manager and National Chef Liaison of one of the largest food and wine festivals in the country, Charleston Wine + Food for its inaugural five years.

More recently in California she has opened two experiential dining restaurants, a cat cafe, Catmosphere and a ping-pong pizzeria Topspin, as well as a modern speakeasy and lounge, Scarlet and a juice/açai/coffee bar, Little Juice, in the resort town of Harbor Springs, MI. She is currently helping move a pop-up Detroit-style pizzeria to a brick and mortar in San Clemente, California and opening a European style café and a Michelin-level Seafood restaurant both in Newport Beach, California.

She has worked in F&B in New Mexico, Virginia, Washington DC, Charleston, Palm Beach, Michigan, New York City, Los Angeles and Orange county and has extensive knowledge of American, Italian, French, Spanish, Australian and New Zealand wines.
